Baked Apples
4 Large apples (Golden Delicious, Ida Red, Jonathan, Rome Beauty)
1/4 C Brown sugar, firmly packed
1 t Ground cinnamon
1 t Ground nutmeg
1/4 C Raisins
4 t Butter
2 T of nuts such as walnuts or pecans (optional)
1/2 C Apple juice or cider
Preheat oven to 400°F.
Peel apples and core them 3/4 of the way down. Place apples in an 8-inch square greased baking dish.
Combine brown sugar, cinnamon, nutmeg, raisins nuts. Spoon one-fourth of mixture into hollow core of each apple. Top each apple with 1 teaspoon butter.
Bring apple juice or cider to a boil, and pour into baking dish. Cover dish and bake for 25 to 35 minutes, basting occasionally with juice. Serve warm. Makes 4 servings.
