In a medium sized bowl combine the yolks of 2 hard boiled eggs, 1 cup white sugar, 2 tablespoons orange juice and 2 sticks unsalted butter. Blend until well mixed and place small mounds on the bread plates. Serve with hot muffins for breakfast or brunch.

Not a whipped butter, but a rich dessert composed of orange-flavoured strands. It looks very attractive and may also be used instead of whipped cream as a topping on a trifle or gateau.
ingredients
2 hard boiled (cooked) egg yolks
2 tsp (10 ml) orange juice, strained
2 tsp (10 ml) orange flower water
3 tbls (25 g) icing sugar (confectioners sugar), sifted
1 stick (8 Tbsp)4 oz (100 g) butter, softened
2 tsp (10 ml) grated orange rind to decorate
method
1. Sieve the egg yolks into a bowl.
2. Using an electric whisk or rotary beater, gradually add the juice, orange flower water, sugar and butter until all the ingredients form a smooth paste.
3. To use, press the fairy butter through a sieve on to a decorative serving plate or individual plates in a pile of thin strands.
4. Sprinkle with grated orange rind and serve at once, with Almond Macaroons
