Or Welsh Rabbit Pie
Pastry for pie crust-you may use a single or double crust as desired
1 medium rabbit
½ lb. beef steak -cubed
¼ lb. cooked ham -cubed
2 tsp fresh chopped parsley
1 cup baby carrots cut into thirds
1 tsp Nutmeg
½ tsp Pepper
½ tsp Salt
Beef or other soup stock
Soak in salt water for 1½ hours and then bone it, chop into 1 inch squaresand placed in a pie dish together with the ham and steak, cut up into small pieces; sprinkle with chopped parsley, pepper and salt and nutmeg, add the stock, and cover with pastry. Bake slowly (325 degrees) for 1½ hours. Alternatively the filling, can be cooked for 1.25 hours in a covered pie dish and then covered with pastry and cooked in a hot oven for 20 minutes until brown.
